The two types of popcorn kernels are the “Butterfly” and “Mushroom”. The “Butterfly” is larger, fluffier and more spread out shaped popcorn. This is the one you will normally find in the movie theater style popcorn. This type is is for holding salt and seasonings. The texture depends on the type of “Butterfly” popcorn used. The “Mushroom” type of popcorn is shaped like small rounded mushrooms. This style is used for making caramel corn and processing. This type of popcorn handles the heavy coatings better. It doesn’t have the spread out wings that would break off like the “Butterfly” type popcorn.
